Les azukis sont une esp\u00e8ce d\u2019haricot rouge de petit calibre \u00e0 la peau tr\u00e8s fine. On confectionne avec deux grands types d\u2019anko : le tsubuan, o\u00f9 les azukis restent entiers, et le koshian, o\u00f9 l\u2019on n\u2019a gard\u00e9 que la pulpe. Il s\u2019agit ici d\u2019une pr\u00e9paration interm\u00e9diaire appel\u00e9e tsubushian, o\u00f9 les azukis sont gard\u00e9s dans leur totalit\u00e9, mais broy\u00e9s pour obtenir une texture fine qui garde toutefois un grain caract\u00e9ristique.<\/p>\n<p>Le mochi \u00e0 l\u2019anko se d\u00e9guste traditionnellement en accompagnement du th\u00e9 matcha, poudre de th\u00e9 vert fouett\u00e9e dans de l\u2019eau chaude, mais il sera \u00e9galement d\u00e9licieux avec un th\u00e9 vert japonais type sencha.<\/p><\/div>\n\t\t\t\t\t\t\t\t\t<div class=\"elementor-tab-title elementor-tab-mobile-title\" data-tab=\"2\" role=\"tab\">Ingr\u00e9dients<\/div>\n\t\t\t\t\t<div id=\"elementor-tab-content-1392\" class=\"elementor-tab-content elementor-clearfix\" data-tab=\"2\" role=\"tabpanel\" aria-labelledby=\"elementor-tab-title-1392\"><p>Eau, farine de riz gluant, sucre de canne bio non raffin\u00e9, f\u00e9cule de tapioca bio, anko bio (azukis bio, eau, sucre de canne bio), sirop de glucose bio, glyc\u00e9rine v\u00e9g\u00e9tale bio.<\/p>\n<p>Allerg\u00e8nes : nos mochis sont 100% d\u2019origine v\u00e9g\u00e9tale et sans gluten.
